This is a copycat version of the Red Lobster restaurant chain's dish of pan-fried catfish coated in seasoned cornmeal that's served with hush puppies (fried cornmeal batter).

Method:

Wash the catfish then pat dry with kitchen paper. Meanwhile, combine the milk, slat, pepper and paprika in a shallow bowl. Arrange the cornmeal on a large plate. Dip the fish first in the milk mixture then roll in the cornmeal, ensuring that the fish is evenly coated. Set aside on a piece of greaseproof (waxed) paper to dry.

Add oil to a depth of 3.5cm in a deep pan, skillet or wok and heat to 180°C. Add the fish and deep fry, turning once, until golden brown and cooked through.

Drain on paper towels and set aside to keep warm as you prepare the hush puppies and cook them in the same oil.
