This is a classic and simple Malagasy stew of cassava leaves cooked with garlic and roasted peanuts.

Ingredients:

1kg cassava leaves
200g roasted peanuts, crushed
3 garlic cloves, crushed
salt, to taste

Method:

Wash the cassava leaves well then either shred very finely or pass through a mincer.

Bring 1l water to a boil, add the cassava leaves and garlic, season with salt and cook gently over low heat for 35 minutes.

Add the peanuts, stir to combine and cook for 10 minutes more.

Serve hot with rice.
