Ingredients:

90g chocolate, roughly chopped
280g plain flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
150g caster sugar
150g brown sugar
250ml sour milk (mix 1 tbsp white wine vinegar in 240ml milk and set aside for 10 minutes), divided
100g butter
1 tsp vanilla extract
1/2 tsp red food colouring
2 eggs

Chocolate Icing

Method:

Melt the chocolate in a bain-marie (double boiler) or a microwave then set aside to cool. Meanwhile, sift together the flour, baking powder, baking soda, salt and sugar in a large bowl. Add the brown sugar and 160ml of the soured milk along with the butter, vanilla extract and red food colouring. Beat thoroughly to combine then add the cooled chocolate and the remaining sour milk along with the eggs.

Continue to beat until the mixture is thoroughly blended then divide the batter between two well-greased 22cm sandwich cake tins. Transfer to an oven pre-heated to 180°C and bake for about 35 minutes, or until the top is springy to the tough and a skewer inserted into the centre of the cake emerges cleanly.

Transfer to a wire rack and allow to cool in the tin for 5 minutes then turn out onto the rack and set aside to cool completely. Sandwich the cakes together with chocolate icing then decorate the top with more chocolate icing when cooled.

Slice into wedges and serve.
