Proper demi-glace takes a long time to prepare. But if you're really in a hurry then this is a shortcut method.
Ingredients:
150ml clear beef gravy or jellied stock (from under beef dripping)
300ml Espagnole sauce
Method:
Place the Espagnole sauce in a pan and heat gently. Add in the beef gravy (or jellied stock) and bring to a boil. Continue cooking until the sauce has a glossy appearance and coats the back of a spoon with a shiny glaze.
Serve as glaze or as an accompaniment to any beef dish.
