Ingredients:

500g sugar
250g freshly-grated coconut flesh
9 eggs
salt, to taste

Method:

Crack the eggs into a bowl then whip with the sugar until thick and creamy. Stir in the sugar then turn into a well-greased baking dish.

Transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until the custard is set, but still slightly wobbly in the centre.

Remove from the oven an allow to cool for 10 minutes before serving.
