Ingredients:
Dry Ingredients:
250g flour + 60g for kneading
1 tsp baking powder
0.5 tsp salt
Wet Ingredients:
400g pumpkin (or 250ml pumpkin puree)
3 tbsp melted butter
honey to taste
oil for frying
Method:
Sift together the flour, baking powder and salt.
In a separate bowl, mash the cooked pumpkin. Blend the melted butter into the pumpkin then add to the dry ingredients.
Mix everything together until a dough forms (add more flour, as needed to attain a firm, workable, dough).
Turn the dough out onto a lightly-floured work surface and roll out to about 5mm thickness.
Use a biscuit cutter or sharp knife to cut out the desired shapes (or you can cut into squares or diamonds).
Heat oil in a large, deep, frying pan or deep fryer to 175°C.
Fry the sopaipillas until golden brown, about 2-3 minutes per side. Drain on paper towels.
Serve warm, drizzled with honey.
