For the Orange Icing:
120g icing sugar, sifted
2 tbsp butter, melted and cooled
1 tbsp freshly-grated orange zest
2 tbsp orange juice
orange food colouring
Method:
Combine all the ingredients for the bars (except the nuts) in a bowl. Beat until smooth then fold in the nuts. Turn the resultant batter into a greased baking pan (about 22 x 33cm). Smooth the top then transfer to an oven pre-heated to 170°C and bake for about 22 minutes, or until nicely browned and cooked through.
Allow to cool in the tin for 10 minutes then carefully turn out onto a a wire rack to cool completely. When the cake is cold, prepare the orange icing. Sift the icing sugar into a bowl and mix with the orange zest. Now stir in the orange juice until you have a spreading consistency then work in the orange food colouring.
>Use this mixture to spread over the top of the cake. Allow the icing to harden then cut into bars before serving.
