Ingredients:

140g plain flour
135g sugar
200g cooked, puréed pumpkin
2 tbsp yellow cornmeal
2 large eggs
1 tsp pure ginseng powder
45g pecan nuts, chopped
2 tsp baking powder
45g raisins
1 tsp salt
2 tbsp rum
1/2 tsp baking soda
2 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 tsp freshly-grated nutmeg
115g butter, melted

Method:

Combine all the ingredients in a bowl and beat with a wooden spoon until smooth. Grease or line 10 muffin cups then divide the batter evenly amongst them. Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the top is golden brown and a toothpick inserted into the centre emerges cleanly.

Allow the muffins to cool in the pan for 10 minutes then turn out onto a wire rack.

Serve warm with coffee.
