Pumpkin Crisps a Classic British recipe for a snack of pumpkin skin pieces baked until they're crisp.
Ingredients:
1 pumpkin
sea salt for sprinkling
extra-virgin olive oil
Method:
Using a potato peeler, cut the skin off the pumpkin in long, thin, strips. Place the skins in a large bowl, sprinkle liberally with sea salt and toss well to combine.
Set aside to stand for a few minutes to allow the salt to draw the excess moisture from the pumpkin skin strips.
Add a small amount of olive oil to the pumpkin skins then toss to combine (do not over-do the oil, the pumpkin skin pieces should be just barely coated).
Arrange on a baking tray then transfer to an oven pre-heated to 200°C and bake for between 25 and 30 minutes, or until the pumpkin skins are crisp.
Serve alone as a snack, or use to accompany soup or a dip.
