Puding Torta (Pudding Cake) is a traditional North Macedonian recipe for a classic no-bake cake made from a blend of milk, bisucuits, dried fruit and instant pudding mix. The full recipe is presented here and I hope you enjoy this classic North Macedonian version of: Pudding Cake (Puding Torta).
Combine the milk, sugar and pudding mix in a blender and process until smooth (you can use either two different flavoured instant puddings or two puddings of the same flavour). Pour into a pan and bring to a boil. Simmer for 5 minutes then take off the heat and stir in the fruit, chocolate or coconut (if using).
Use 1/3 of the biscuits to line the base of a deep pan or springform cake tin (crush a few biscuits to fill in the gaps. Pour over a third of the pudding mix then arrange another layer of biscuits on top. Again pour in a third of the pudding mix and add a final layer of biscuits. Finish with a final layer of the pudding mix.
Allow the pudding mix to cool completely then place in the refrigerator to set. Garnish with whipped cream and serve, sliced into wedges.
