Prassa (Leek and Rice Stew) is a traditional Armenian recipe for a classic dish of leeks part-fried in olive oil then cooked in water and lemon juice with rice. The full recipe is presented here and I hope you enjoy this classic Armenian version of: Leek and Rice Stew (Prassa).

Ingredients:
9 leeks, washed and cut into 5cm lengths
1 large onion, sliced
120ml olive oil
360ml water
45g rice
3 tbsp lemon juice
salt, to taste
Method:
Heat the oil in a pan then add the onion and fry for about 5 minutes, or until soft. Add the leeks and stir to combine then fry for 5 minutes more. Now add the water and bring the mixture to a boil. Reduce to a simmer then cook or 15 minutes more.
Stir-in the rice and return to a simmer. Continue cooking for about 20 minutes, or until the rice is tender and almost all the liquid has evaporated. Season with lemon juice and salt and serve. Traditionally this dish can be served either hot or cold.
