Poulet Grillé de Burkinabé (Burkina Faso Berbecued Chicken)
Poulet Grillé de Burkinabé (Burkina Faso Berbecued Chicken) is a traditional Burkinabé (from Burkina Faso) recipe for a classic dish of spiced spatchcocked chicken cooked on a barbecue. Ingredients:
1 whole chicken, spatchcocked
12 chicken portions (thighs, drumsticks, wings)
2 tbsp chilli powder
6 tbsp oil
1 tbsp ground black pepper
2 tbsp sea salt
6 tbsp Kan Kan Kan powder
Method:
Wash and dry the chicken, mix with the oil then scatter over the chilli, black pepper and salt. Use your hands to rub the spices into the chicken pieces then set aside to marinate for 20 minutes.
In the meantime, pre-heat your barbecue. Allow the coals to be covered with a layer of ash then sit the spatchcocked chicken on top. Cook for 20 minutes then turn over and add the chicken portions.
After 10 minutes turn the chicken portions over and cook for 10 minutes on the other side. At the end of this time test the chicken for done-ness. If ready, sprinkle with the kan kan kan powder and transfer to a serving plate. If not done, cook for 5 to 10 minutes more.
