Poulet Crapodine (Chicken Crapodine) is a traditional Ivorian (from Côte d'Ivoire) recipe for a classic dish of chicken roasted in a tin with a covering of onions and tomatoes that's served with potato slices fried in butter. Ingredients:
1 chicken
4 large tomatoes, sliced
6 potatoes
2 onions, sliced
4 garlic cloves, crushed
2 tbsp butter
leaves from 1 small bunch of parsley, finely chopped
2cm length of ginger, finely grated
1 Maggi chicken cube
Method:
Cut the chicken into serving-sized pieces. Crush the garlic and mix with the parsley, Maggi chicken cube and the grated ginger. Rub this mixture all over the chicken then sit the chicken in the base of a roasting tin.
Slice the onions and tomatoes and layer over the chicken. Cover with foil and transfer to an oven pre-heated to 180°C. Cook for about 20 minutes, or until the chicken is tender.
About 10 minutes before the chicken is due to be ready slice the potatoes thinly (or dice them). Melt the butter in a pan, add the potatoes and fry until golden brown and cooked through.
