Pork Lo Mein a Classic Chinese recipe for a stir-fry dish of marinated pork with carrot, ginger, mushrooms, breansprouts and spring onions finished with cooked noodles.
For the Marinade:
1 tsp light soy sauce
dash of sesame oil
pinch of ground white pepper
Method:
Mix together all the marinade ingredients in a bowl then add the pork and marinate for at least 20 minutes.
In the meantime, cook the noodles according to the packet instructions. When cooked, drain and set aside.
Place a wok over high heat, add 1 tsp of the oil and use to stir-fry the pork until it has changed colour. Remove the meat with a slotted spoon and set aside.
Heat the remaining oil in a clean wok and use to stir-fry the garlic and ginger until fragrant. Add the carrot and cook for 1 minute then add the mushrooms and cook for 1 minute more. Toss the pepper to mix and cook for 1 minute more before adding the pork, salt and stock.
Allow the mixture to heat through then toss in the noodles, followed by the beansprouts, stirring well to combine.
Turn into a warmed serving dish, sprinkle over the spring onions and serve.
