Ingredients:

420g (3 cups) fine pastry flour
1 tbsp baking powder
1/2 tsp salt
150g (3/4 cup) butter, softened
1 1/2 cups (350g) sugar
3 eggs
1 tsp vanilla extract
250ml (1 cup) lukewarm milk
120g (4 oz) raisins

Method:

Sift together the flour, baking powder and salt into a bowl then set aside.

Combine the butter, sugar, eggs and vanilla in a bowl and beat with an electric whisk until light and fluffy (about 5 minutes). Add the flour mixture alternately with the milk, beating at low speed as you add the ingredients. Add the raisins and gently fold in until well mixed.

Line the cups of two 12-well muffin tins with paper cases and divide the batter between these. Transfer to an oven pre-heated to 160°C (325°F, Gas Mark 3) and bake for about 20 minutes, or until baked through and golden brown on top (a toothpick inserted into the centre of the cupcake should emerge cleanly). Turn out onto a wire rack to cool then top with your favourite icing or frosting and decorate as you see fit.
