Pishme (Turkmen Dough Fritters)

Ingredients:

1 tsp Salt
1 tsp Dry Yeast
300ml Milk, Slightly warm
500g Flour
700ml Oil, For deep frying

Method:

Mix the yeast in the warm milk. Sift the flour and salt into a large bowl.

Now slowly add yeast and milk to the flour and mix until a soft dough is formed.

Wrap the bowl in a thick towel and set aside in a warm spot to prove for 30 minutes.

Knead and roll the dough in two balls, and let them rest for another 5 minutes.

Roll each piece of dough into a 5mm thick sheets. Cut long strips about 5mm wide from them.

Cut these strips crosswise to form diamond shapes. Or cut the strips into 5cm lengths and twist them.

Heat oil in a pan and deep fry the dough strips. Stir continuously while frying.

The pishme are ready once both sides are golden brown.
