Pishies (Pastries with Syrup)

Pishies (Pastries with Syrup) is a traditional Cypriot recipe for a classic snack of a cinnamon-flavoured egg dough that's deep fried and served in a sugar, honey, lemon juice and rose water syrup. Ingredients


For the Dough:
360g plain flour
250ml oil or butter
250ml water
1 tsp salt
3 eggs
1 tsp ground cinnamon

For the Syrup:
200g sugar
500ml water
3 cloves
1 tbsp lemon juice
120ml honey
120ml rose water

Method:

For the dough, sift together the flour and salt into a bowl. Mix in half the oil then ad the eggs. Work in the water, a little at a time, until the ingredients come together then knead until the dough is smooth and elastic. Cover with a cloth and set aside to rest for 60 minutes.

In the meantime, prepare the syrup. Combine all the ingredients in a saucepan and cook gently over low heat for about 10 minutes, or until the syrup begins to thicken. Take off the heat and set aside.

Turn your rested dough onto a floured work surface and knead lightly. Divide into balls then roll each one out into thin circles. Brush with the remaining oil and sprinkle over the ground cinnamon. Shape each circle into a ball and roll out into circles again. Repeat the brushing with oil and dusting with cinnamon.

Roll each circle into a roll and cut into 3cm lengths. Roll the pieces lightly into small, flat, cakes. In the meantime, heat oil in a deep fryer to 180°C. Drop the pastries in the hot oil and fry until golden brown.

Remove from the oil with a slotted spoon and dip in the syrup whilst still hot. Drain in a sieve, dust with a little powdered syrup and serve whilst still hot.
