Pilaf Rizi (Rice Pilaf)

Pilaf Rizi (Rice Pilaf) is a traditional Cypriot recipe for a classic accompaniment of rice cooked in a chicken or veal stock base with onions, lemon juice, oil and tomatoes. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Rice Pilaf (Pilaf Rizi).

Ingredients:

200g rice
1l chicken or veal broth
50g onions, finely chopped
60ml lemon juice
100g ripe tomatoes, finely chopped
120ml corn oil
salt and freshly-ground black pepper, to taste

Method:

Heat the oil in a saucepan, add the onion and fry until softened (about 3 minutes). Add the rice and stir in the oil for a few minutes, or until the rice grains begin to whiten. At this point stir in the lemon juice and season to taste.

Now add the tomatoes, stir to combine then pour in the meat broth. Bring to a simmer, cover the pan and cook gently for about 18 minutes or until the rice is tender.

Take the pan off the heat and remove the lid. Cover the mouth of the saucepan with a thick cloth, sit the lid on top and set aside to steam for 10 minutes.

Serve hot.

This kind of pilaf is often served with meat in a sauce base.
