This is a classic recipe for a Victorian version of Bacon Relishes that's derived from Robert Kemp Philp's 1859 volume, The Dictionary of Daily Wants. Below you will find both the recipe in its original form and a modern redaction.
Original Recipe
BACON RELISHES.—Cut cold bacon into thin slices, powder both sides with bread raspings and put them before the fire in a Dutch oven. In three minutes one side will be done, and in three minutes more the other.
Modern Redaction
Ingredients:
250g boiled bacon, cut into thin slices
100g grated or finely ground breadcrumbs (use stale bread)
Method:
Take cold, cooked, bacon and cut into thin slices. Dust these with the fine breadcrumbs then place in an oven-proof casserole (or Dutch oven) and transfer to an oven pre-heated to 200°C. Cook for about 3 minutes per side (turning half way through) and serve.
