Ingredients:
250ml smooth peanut butter
200g granulated sugar
80ml golden syrup (corn syrup)
80ml water
2 tbsp butter
Method:
Combine the sugar, syrup, butter and water in a medium saucepan over medium heat. Cook, stirring constantly, until the sugar dissolves.
At this point cover the saucepan with tight-fitting lid and allow the mixture to boil for about 3 minutes. Remove the lid and continue boiling, stirring constantly, for between 15 and 20 minutes, or until a confectioner's thermometer reads 152°C.
Immediately take the pan off the heat and quickly stir in the peanut butter. Pour the resultant toffee mix into a 22cm square pan that's lined with kitchen foil and greased. Spread the mixture until even then set aside for a few minutes, or until it begins to cool and set.
At this point oil a sharp knife and use to score the toffee into squares. Now set the toffee aside to cool completely then turn out onto a work surface and break along the score lines.
