Patbingsu (팥빙수) is a version of bingsu, Korean shaved ice with sweetened red bean paste. This version starts with plain frozen water rather than the frozen milk used for most other bingsu recipes. This is probably the most popular summer dessert in Korea.

Method:

Place the ice cubes into a food processor (or shaved ice machine if you have one). Process the ice for about 20 seconds until it has a smooth snow-like texture.

Turn the shaved ice into a chilled serving bowl and top with your choice of fruit. Now add a dollop of red bean paste and the mochi cakes.

Garnish with sweetened condensed milk then serve.
