Parsnip and Apples

his is a very interesting Irish recipe for a blend of apples and parsnips that was traditionally served with roast pork. However, the sweetness of the parsnips married with the tartness of the apples makes this an excellent accompaniment to duck or goose as well.

Ingredients:

500g parsnips, peeled and chopped
500g cooking apples, peeled, cored and sliced
2 tbsp butter
freshly-ground black pepper, to taste
pinch of ground cinnamon
pinch of ground cloves
pinch of freshly-grated nutmeg

Method:

Bring a pan of water to a boil. Add the parsnips and cook for about 25 minutes or until soft. In a separate pan cook the apples with about 3 tbsp water until they are also soft.

Drain the parsnips thoroughly and combine in the pan with the apples. Mash both together until smooth then stir in the butter, black pepper and spices. Allow the mixture to heat through.

Serve to accompany your choice of meat.
