Ouaddaï (Fried Millet Dough) is a traditional Chadian recipe for a classic snack made from millet and wheat flour fritters moistened with oil and bound with eggs that are deep fried before serving. Ingredients:
300g millet flour (should be ground on the day of preparation)
150g wheat flour
120ml oil
100g powdered sugar
1 egg
oil for frying
Method:
Combine the flours in a bowl. Heat the oil slightly then pour over the flour mixture and stir to combine.
Add the sugar and whole egg and mix to bring the ingredients together. Turn onto a floured work surface and knead for about 5 minutes, or until smooth.
Flour the dough and the rolling pin and roll out to the thickness of pasta. Cut the dough into strips about 5mm wide with a pastry wheel and trim to 3cm lengths.
Heat oil in a deep pan or deep dryer to 180°C. When the oil reaches temperature add some of the pastry strips and fry for a few minutes until golden brown.
Remove with a slotted spoon and drain on kitchen paper as you fry the next batch.
