Ortikia Skharas (Grilled Quails) is a traditional Cypriot recipe for a classic barbecue dish of quails in a breadcrumb coating that are cooked over charcoal. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Grilled Quails (Ortikia Skharas).

Ingredients:
4 quails
250ml lemon juice
250ml oil
250ml fresh breadcrumbs
salt and freshly-ground black pepper, to taste
Method:
Begin by pre-heating your barbecue. Pluck and draw the quails then wash thoroughly and pat dry. Use kitchen shears to cut along the backbones then flatten the birds out. Season to taste with salt and black pepper.
In a bowl, whisk together the lemon juice and oil. Dip the quails into this mixture, then dip in the breadcrumbs to coat. Set them on a grill and cook over the charcoal (over fairly low heat) for about 60 minutes or until cooked through.
You need to cook high up and over low heat to prevent the flames from the coals scorching the birds.
