Orange Bergamot Nuts

Ingredients:

150g pecan nut halves
100g sugar
60ml water
2 tsp finely-grated orange zest
2 tsp bergamot (bee balm) leaves, finely chopped

Method:

Combine the sugar and water in a large frying pan. Heat gently until the sugar dissolves then add the pecan nuts, orange zest and chopped bergamot leaves. Bring to a simmer and continue cooking, stirring constantly, until the syrup thickens and the pecans have a sugary appearance.

Take off the heat and turn the mixture onto a greaseproof (waxed) paper sheet to cool. As soon as you have poured the mixture on use a fork to quickly separate the nuts. Once cooled, transfer to a lidded container to store.
