Nutty Moroccan Couscous

Ingredients:

500ml vegetable stock
75g butter
60g chopped dates
45g dried apricots, chopped
60g sultanas
350g couscous
2 tsp ground cinnamon
75g toasted almonds, slivered

Method:

Add the stock to a large pan and bring to a boil then add the butter, apricots, dates and raisins. Allow to boil for 3 minutes then remove from the heat and stir-in the couscous. Cover the pan and allow to stand for 5 minutes.

At the end of this time stir-in the cinnamon and toasted almonds and serve immediately.
