Nettle Purée and Oatmeal Cakes (Nettle Purée Oatcakes)
Nettle Purée Oatcakes is a traditional British recipe for a classic breakfast cake of nettle puree flavoured with Parmesan cheese and bound with oatmeal that's fried and served for breakfast. Ingredients:
200ml nettle purée
100g fine oatmeal
45g freshly-grated Parmesan cheese
bacon fat for frying
Method:
Prepare the nettle purée according to the recipe then turn into the bowl. Stir in the parmesan cheese then slowly add the oatmeal, stirring until the mixture comes together like a pastry dough.
Form into small cakes then heat the bacon fat in a non-stick pan and use to fry the cakes until cooked through and golden brown on both sides. Serve as a breakfast accompaniment to bacon, sausage and fried eggs.
