Mushosh (Lentils with Apricots)
Mushosh (Lentils with Apricots) is a traditional Armenian recipe for a classic stew of lentils and apricots typically served as an accompaniment. The full recipe is presented here and I hope you enjoy this classic Armenian version of: Lentils with Apricots (Mushosh).

Ingredients:
450g brown lentils, washed and drained
1 tsp salt
225g dried apricots
2 tbsp sugar
coriander leaves, to garnish
Method:
Place the lentils in a pan, cover with water then add the salt and bring to a boil. Reduce to a simmer, cover and cook for about 35 minutes, or until soft. Remove the lid, add the apricots and sugar and top-up the water level with hot water so all the ingredients are just covered.
Return to a simmer and cook for an additional 15 minutes, until the apricots are tender. This is typically served as a side dish and can be served either hot or cold.
