Morels in Sweet Red Wine

This recipe can be made with any species of edible morels (or a mixture).

Ingredients:

10 large morels (about fist size), quartered lengthways
125g butter
120ml sweet red wine
250ml warm water
40g flour
1/2 tsp salt
1/2 tsp black pepper
1 garlic clove, finely chopped

Method:

Add the flour to a bowl and add the warm water a little at a time until you have a smooth paste then season.

Meanwhile add the butter to a pan and use this to fry the garlic for 2 minutes before adding the morels. Fry until tender (about 5 minutes) then take out and reserve the mushrooms. Reduce the stock until thickened then turn up the heat and add the red wine, stirring to combine.

Reduce the heat and cook for a few minutes before adding the flour blend. Stir and cook until thick, add the mushrooms back to the sauce and serve.
