Mocha Fudge: A British recipe for a classic fudge flavoured with a blend of chocolate and coffee with nuts in a condensed milk syrup base.

Ingredients:

50g (2 oz) plain chocolate
1 tbsp instant coffee powder
300ml (1 1/4 cups) milk
400ml (14 oz) tin of sweetened condensed milk
225g (8 oz) butter
2 tbsp golden syrup
900g (2 lbs) granulated sugar
pinch of cream of tartar
100g (3 1/2 oz) nuts, finely chopped

Method:

Break the chocolate into pieces and place in a heat-proof bowl. Melt over a pan of barely-simmering water.

Combine the coffee, milk, condensed milk, butter, golden syrup, granulated sugar and cream of tartar in a large, heavy-based pan. Heat slowly, stirring constantly, until the sugar has dissolved. Now bring the mixture to a boil and cook, stirring constantly, until a little of the mixture dropped into cold water forms a soft ball (this is the soft ball stage, equivalent to 116°C [240°F] as measured on a confectioner's thermometer).

Stir in the melted chocolate and the nuts then quickly beat with a wooden spoon until thick and grainy in appearance.

Immediately pour the fudge into a well-greased 33 x 23cm (12 x 9 in) shallow baking tin. Leave until slightly set then mark into bars or small squares and put aside until completely set. Turn out and separate the pieces when cold. Store in an air-tight tin or jar.
