Ingredients


100ml plain yoghurt
1 tbsp honey
2 tsp orange juice
1 tbsp himalayan balsam seeds
1/2 tbsp cider vinegar
black pepper, to taste
100g wild mustard greens
60g chickweed, tops only
30g wild garlic, roughly torn
40g hairy bittercress
4 leaves garlic mustard
8 hawthorn or violet or primrose blossoms
3 tbsp sea purslane
20g greater plantain leaves
80g wild watercress, washed
80g cherry tomatoes, halved

Method


Make the dressing by whisking together the yoghurt, honey, orange juice, himalayan balsam seeds and vinegar. Season liberally with the black pepper.

Combine all the greens in a bowl, add the dressing and toss gently.
