Mielie Fritters

Ingredients:

2 mielie (white maize cobs) or 2 corn cobs
75g plain flour
1 egg
salt and freshly-ground black pepper, to taste
oil or fat for frying

Method:

Bring a pan of lightly-salted water to a boil, add the maize cobs and cook for about 25 minutes, or until tender. Drain the cobs and allow to cool slightly then use a sharp knife to slice the kernels from the cob.

Mix together the flour and egg to form a batter. Season to taste with salt and black pepper then stir in the maize kernels.

Heat oil to a depth of 5mm in a skillet. Drop the maize batter into this by the tablespoon and fry the fritters on both sides until golden brown and cooked through. Drain on kitchen paper and serve as an accompaniment to meat.
