Microwave Polenta and Sausage is a modern American recipe for a classic dish of polenta cooked in the microwave and fried that's served with an Italian sausage and tomato sauce that's adapted to be cooked in a microwave. Ingredients:
850ml hot water
150g polenta (yellow cornmeal)
1/2 tsp salt
500g Italian sausage, sliced into 6mm thick lengths
1 onion, chopped
2 garlic cloves, crushed
500g tinned plum tomatoes
Method:
Combine the water, polenta and salt in a microwave-safe casseroled dish. Stir thoroughly to combine then cover with clingfilm (plastic wrap). Snip two holes in the top then place in your microwave (1200W) and cook on high power for 5 minutes.
Take out of the microwave and carefully remove the clingfilm then stir the mixture. Cover with a clean tea towel, place back in the microwave and cook on full power for 5 minutes more, stirring half way through.
Pour the resultant polenta mix into a greased 25cm diameter pie dish then set aside to cool before refrigerating for at least 60 minutes, or until firm.
Heat a little oil in a frying pan, add the sausage, onion and garlic and fry for about 8 minutes, or until the sausage is no longer pink. Stir in the tomatoes then turn the mixture into a microwave-safe dish. Place in your microwave and cook for about 6 minutes, or until the tomatoes have broken down and the sauce has thickened.
When the polenta is set slice into wedges. Place on a sheet of kitchen foil and set under a hot grill (broiler) cook for 1 minute per side, or until lightly browned. Arrange on a serving dish and pour over the sausage and tomato sauce.
