Melting Moments is a traditional British recipe for a classic crisp and crunchy biscuit (cookie) made of butter, sugar, egg yolk and flour with vanilla extract and cornflakes that melt in the mouth. Very traditional biscuits that are crisp and crunchy but melt in the mouth. So delicious that a freshly-baked batch never seems to last very long.
Ingredients:
100g butter
75g caster sugar
1 egg yolk
a few drops of vanilla extract
150g self-raising flour
crushed cornflakes
Method:
Cream together the butter and sugar until light and fluffy then add the egg yolk and beat in well to combine. Add a little vanilla extract then sift-in the flour and combine to form a stiff dough.
Divide the dough into 24 equal pieces and roll in the crushed cornflakes. Place the balls on lightly-greased baking sheets, flattening them slightly so they stay in place and spacing them about 5cm apart. Place in an oven pre-heated to 190°C and bake for about 15 minutes, or until just browned.
Allow to cool for 10 minutes on the baking tray then transfer to a wire rack to cool completely. Store in an air-tight jar.
