Meghli (Rice Flour Pudding) is a traditional Lebanese recipe for a classic dessert of rice flour and spices cooked in water until thick that's sweetened with sugar, allowed to cool and topped with muixed nuts before serving. Method:
Mix the rice flour with a little of the water to form a smooth paste. Place the remaining water in a pan and bring to a boil. When boiling, whisk in the rice flour slurry then add all the spices and bring back to a boil, stirring constantly.
Add the sugar and keep stirring. Continue cooking over a high heat until the mixture thickens to the consistency of porridge and the rice is no longer raw. Take off the heat and pour into individual dessert plates or ramekins. Set aside to cool, top with the mixed nuts and serve.
