Mantarinadha (Tangerine Squash)

Ingredients:

1l tangerine juice
600g sugar
500ml water
3 cloves
4 tbsp lemon juice
peel for 2 tangerines

Method:

Peel the tangerines and squeeze then to extract the juice. Combine the sugar, water and cloves in a saucepan and heat gently until the sugar dissolves. Add the tangerine juice and the peel of 2 tangerines then bring the mixture to a boil.

Take the pan off the heat and add the lemon juice. Set aside until half cooled then transfer into thoroughly washed and sterilized bottles. Store in the refrigerator until needed.

To serve, pour 4 tbsp of the squash mixture into a highball glass. Add 4 ice cubes, a slice of fresh orange then top with chilled water, stir well to combine and serve (you can use still or sparkling water, as you prefer).
