Mango and Ginger Dipping Sauce is a traditional British recipe for a classic Indian-inspired dipping sauce of mango flesh, ginger and garlic in an orange juice and rice wine base with hot pepper sauce. Ingredients:
350g ripe mango flesh, sliced
2 tsp freshly-grated ginger
2 tbsp rice wine vinegar
1 garlic clove, minced
3/4 tsp turmeric
juice of 1 orange
3 tbsp extra virgin olive oil
Tabasco sauce, to taste
salt and black pepper, to taste
Method:
Add all the ingredients (except the Tabasco sauce and seasonings) to a food processor and purée until smooth. Pour the fruit paste into a dipping bowl, season wit the Tabasco sauce, salt and black pepper and serve as a dipping sauce.
This sauce makes an excellent accompaniment to grilled seafood and fish.
