Ingredients:
280g plain flour
3 tsp baking powder
1 tsp cream of tartar
2 eggs, beaten
120g sugar
milk to combine
Method:
Sift together the flour, baking powder and cream of tartar into a bowl then stir-in the sugar. Carefully mix in the beaten egg then add the milk gradually, beating all the time, until a stiff batter (of dropping consistency) has been produced.
Add oil or fat to a depth of about 2cm in a pan and drop the batter by the tablespoon into this. Fry until nicely browned then drain and serve.
