Yellow rice is an accompaniment that's prepared throughout much of Southern Africa. The South African variant is typically the most elaborate and in comparison this Malawian version is much simpler.
Ingredients:
200g white long-grain rice
100g seedless raisins
1 tbsp brown sugar
1 cinnamon stick
1 tsp salt
1 tbsp ground turmeric
Method:
Rinse the rice thoroughly then place in a pot with all the other ingredients. Pour in 800ml water, bring to a boil then reduce to a simmer, cover the pot and cook gently for about 25 minutes, or until the rice is tender and the mixture is almost dry.
Drain off any excess water, fluff the rice then turn into a warmed bowl and serve.
