Mabuyu (Kenyan Baobab Candies)

Also known as buyu, this is a classic Kenyan sweet/candy (a speciality of Mombasa) of baobab pulp pieces (note you need pieces of pulp for this not baobab fruit powder or seeds) coated in a coloured syrup

Ingredients:

400g (2 cups) sugar
1l (4 cups) baobab fruit pulp (plus extra)
red food colouring
1 1/2 tsp vanilla extract

Method:

Pour 500ml (2 cups) boiling water into a bowl. Add 400g (2 cups) golden caster sugar and 1 1/2 tsp vanilla extract. Stir until the sugar has dissolved.

Pour into a pan, place over high heat and add enough of your food colouring to give a bright colour. Bring to a boil and cook until bubbles form on the surface. It should feel tacky when you place some between your forefinger and thumb (10-15 minutes cooking).

Place your baobab pulp (remove any strings) in another pot. Pour over about 1/4 of the syrup and stir to combine, mixing until all the baobab pieces are covered in the syrup.

Pour in half the remaining syrup and again stir to thoroughly combine. If the mixture is too wet add more baobab pulp pieces. Continue stirring until the syrup begins to cool and coats the baobab. At this point add the remaining syrup, again stirring constantly until the syrup cools and you have a thick layer covering the baobab pieces.

Cover baking trays with greaseproof (waxed) paper and arrange the coated baobab in a single layer on these. Set aside to cool completely then carefully break into pieces and store in an air-tight tin.
