M'chicha (Spinach with Peanuts)

Ingredients:

60g butter
360g spinach, steamed, drained and chopped
50g grated coconut
60g peanuts, finely chopped
salt and freshly-ground black pepper, to taste

Method:

Melt the butter in a 2l saucepan. Add the spinach along with the grated coconut and peanuts. Toss lightly to mix and coat in the butter. Continue cooking until all the liquid has been absorbed then adjust the seasoning to taste, turn into a serving bowl.

Serve as an accompaniment with any meat, poultry or fish dish or starter.
