Ingredients:

200g glutinous rice flour
1 tbsp slaked lime water
banana leaves
1/4 coconut, grated
pinch of salt
palm sugar syrup (dissolve 100g palm sugar in 200ml water and boil briefly)

Method:

To make slaked lime water (an important ingredient in many Indonesian and Thai desserts), dissolve 2 tbsp lime paste (calcium hydroxide) in 1.5l water. Stir well and leave until the lime crystals sink to the bottom before pouring off the clear liquid into a jar or other container for storage.

Wash the glutinous rice, place in a large bowl, cover with water and set aside to soak for 60 minutes. Drain the rice then add the slaked lime water (this makes the rice rolls more solid) and stir to combine.

Take a piece of banana leaf and fill three-quarters full with the glutinous rice. Secure the ends then roll the leaf and tie securely with string so that they cannot burst during cooking. When done, place the rolls in a pan and cover with water. Bring to a boil and cook for 4 hours (top-up with boiling water, as needed — do not allow the rolls to cool).

When done, allow to cool then slice the rolls into 2cm thick pieces. Arrange on a serving plate then mix together the coconut and salt in a bowl. Sprinkle this over the rice rolls then pour over some palm sugar syrup. Serve immediately.
