This is a classic Georgian vegetarian soup made with that store-room staple, the red bean but enlivened with the addition of a range of fresh herbs.

Ingredients:

340g dried red beans, soaked in plenty of water over night and drained
2l water, hot
70g walnuts,shelled and processed to a paste
2 tsp salt (or to taste)
1/4 tsp freshly-ground black pepper
150g celery, chopped
2 medium onions, finely chopped
1 tbsp fresh mint, chopped
1 tbsp fresh flat-leaf parsley, chopped
1 tbsp fresh dill, chopped
2 tbsp fresh coriander, chopped

Method:

Combine the beans and the hot water in a pan. Bring the mixture to a boil and cook over moderate heat until the beans are soft (about 1 hour, depending on the age of the beans). Drain the beans (reserve the liquid) then place the beans in a large bowl and mash with 250ml of the cooking liquid. Return the bean purée to the pan then add the walnut paste, salt, pepper, celery and onions.

Return the mixture to a simmer and cook over low heat for 10 minutes (top up with bean cooking liquid if too thick). Add the herbs and continue simmering for 10 minutes further. Serve hot, ladled into bowls and accompanied with crusty bread.
