Lingonpäron (Lingonberry Pears)

Lingonpäron (Lingonberry Pears) is a traditional Swedish recipe for a classic dish of pears that are stewed in a Lingonberry (cowberry) syrup before being cooled over night and served the following day with cream. Ingredients:

6 dessert pears, peeled (but leave the stalks attached)
500g cowberries (lingonberries)
200g granulated sugar
250ml water

Method:

Combine the cowberries, sugar and water in a saucepan. Bring to a boil and cook for 15 minutes. Take off the heat and pass through a fine-meshed sieve, pressing down with the back of a spoon to purée the fruit.

Peel the pears and core from the bottom (do not go all the way through and leave the stalks attached). Stand upright in a pan and pour in the lingonberry purée. Bring to a simmer and cook, covered, for about 30 minutes, or until the pears are tender. Every 5 minutes or so spoon the pan juices over the pears to ensure that they are coloured red.

Take off the heat and set aside to cool over night. Serve the following day with the pan juices poured over them and accompanied by whipped cream.
