Ingredients:

1.2l ham or bacon stock (with bits of ham or bacon if possible)
225g lentils, washed
1 onion, chopped
1 large carrot, grated
1 tsp parsley, chopped
sippets of fried bread, to serve (thin, triangular, pieces)

Method:

Ensure that the stock is completely free of fat. Pour into a saucepan and bring to a boil before adding the lentils and onion. Bring to a simmer, partially cover the pan and cook for 70 minutes.

Now add the carrot and parsley and stir to combine. Bring the mixture back to a simmer and cook for 20 minutes more, or until the lentils are very tender and have broken down to a mush.

Serve hot, accompanied by sippets of fried bread.
