Lemonadha Siropi (Lemon Squash)

Ingredients


1l lemon juice (from fresh lemons)
800g sugar
1l cold water
100ml grated lemon zest
peel of 1 lemon

Method:

Use unwaxed lemons for making this. Wash the lemons and pat dry then grate enough of the lemons to yield 100ml of zest.

Juice the lemons and strain to remove any pips. Turn into a bowl and add the lemon zest. Set aside to infuse for 30 minutes.

Combine the water and sugar in a saucepan and heat gently, stirring, until the sugar has dissolved. Add the lemon juice and lemon zest mixture to the pan and heat until just beginning to boil then take off the heat.

Set aside to cool then pour into thoroughly washed and sterilized bottles. Store in the refrigerator until needed.

To serve, pour 4 tbsp of the squash mixture into a highball glass. Add 4 ice cubes, a slice of fresh orange then top with chilled water, stir well to combine and serve (you can use still or sparkling water, as you prefer).
