Brotchan Roi (Leek and Oatmeal Broth) is a traditional Irish recipe for a classic Lenten (ie meatless) soup made from leeks and oatmeal cooked in a blend of milk and vegetable stock. This is a recipe for a very traditional Irish lenten soup (ie meatless) whose antecedents go back at least to the 15th century.
Ingredients:
600ml milk
600ml vegetable stock
3 tbsp butter
3 tbsp (rounded) oatmeal
4 leeks, trimmed, thoroughly washed and sliced into 2cm long rounds
2 tbsp fresh parsley, chopped
salt and freshly-ground black pepper, to taste
Method:
Combine the milk and vegetable stock in a large saucepan. Add the butter, bring the mixture to a boil then stir in the oatmeal. Bring back to a boil then reduce to a simmer and cook for 10 minutes, stirring occasionally.
Add the leeks and seasoning then bring back to a boil. Reduce to a simmer, cover and cook for 18 minutes more. Stir in the parsley and cook for 2 minutes.
