Ingredients:

salad leaves (eg lettuce leaves)
fresh tomatoes
onions
steamed or boiled sweet potatoes

For the Dressing:
juice of 1 lemon
2 pinches of salt
a few pinches of Maggi cube, crumbled
2 tbsp oil
pinch of freshly-ground black pepper

Method:

Wash the salad leaves, tomatoes, onions and lemons with water then pat dry.

Cut the lettuce leaves (if using) into three pieces across the width; alternatively use a mix of greens like rocket, baby spinach, lamb's lettuce etc. Cut the onion and tomatoes into medium-sized slices.

Peel the cooked sweet potatoes and dice the flesh.

Line your salad bowl with the greens, add the sweet potato pieces then add the tomato and onion.

Whisk the dressing ingredients together and pour over the salad ingredients.

Serve.
