Essentially this is a Nigerian custard made from a blend of coconut milk and condensed milk thickened with cornflour (cornstarch).
Ingredients:
flesh of 1 coconut, grated
500ml water
250ml condensed milk
sugar, to taste
2 tbsp cornflour (corn starch)
Method:
Blend the grated coconut in a bowl with the water. Set aside for 10 minutes then beat and strain the liquid into a pot then mix with the condensed milk.
In a bowl, whisk together the cornflour with about 4 tbsp water until you have a smooth slurry. Bring the coconut milk to a boil then whisk in the cornflour slurry, beating constantly. Add sugar to taste (about 2 tbsp) then take off the heat and serve hot.
