The Tokelau Kilo'a is a traditional dish that holds a special place in the culinary history of the Tokelau Islands. Known for its unique blend of local flavours and ingredients, this dish is a testament to the ingenuity and resourcefulness of the islanders. The word "Kilo'a" refers to a mixture or a kind of salad, which is a prevalent form of dish in the region. Historically, the Tokelau Kilo'a was a communal dish, often shared during gatherings and celebrations.
For this recipe you need 1 coconut's worth of coconut milk (see the coconut milk recipe for how to prepare).
Ingredients:
1 Coconut, milk extracted
500g Fish fillets (preferably tuna or mackerel)
juice of 1 Lime
Salt and freshly-ground black pepper, to taste
1 Onion, finely chopped
1 Chilli, finely chopped (+more for serving)
1 Tomato, finely chopped
6 Lettuce leaves, torn
1 bunch Coriander, leaves chopped
Method:
Take the fresh fish fillets and cut them into bite-sized cubes. In a bowl, marinate the fish cubes with freshly squeezed lime juice, a pinch of salt, and finely chopped chilli. The lime juice will cook the fish partially, giving it a ceviche-like texture. Set the fish aside to marinate for about 20 minutes.
Once the fish is ready, it's time to assemble the Kilo'a.
In a large bowl, combine the marinated fish with the chopped onion and tomato.
Add the lettuce and coriander and mix gently. Pour the extracted coconut milk over the mixture and toss everything together. Add a pinch of black pepper and adjust the salt to taste.
For those who love a bit of heat, extra chilli can be added at this point.
Kilo'a is best enjoyed fresh. Serve it in a large dish and let everyone help themselves. The combination of flavours from the coconut milk, tangy lime, fresh vegetables, and fish creates a refreshing and satisfying tasting experience. Pair this dish with some boiled taro or breadfruit for a complete meal.
